This exquisite vinegar, produced in Veracruz, Mexico, is both rich and delicious without being overwhelming. Made from fermented bananas, it hails from the Casa Stivalet plantation in the picturesque state of Veracruz. Unlike other fruit-infused vinegars, this one is not simply banana-flavored vinegar, but rather uses fermented platano machos, a type of bananas that falls somewhere between a regular banana and a plantain. The result is a delightfully fruity flavor that is distinctly banana, but not overly sweet. With an acidity of 6%, it adds a unique tropical touch to salads, elevating any cuisine.
