A staple cookware in the Oaxacan kitchen, this handmade comal de barro rojo is a beautiful and traditional piece to add to your kitchen. These comals are used to make tortillas, roast spices and chiles as well as cook so many dishes.
The comal is hand finished and must be cured by using food grade Calcium Hydroxide, most commonly known as Cal.
Because they are handmade, no two pieces are exactly the same.

- Proper seasoning and care instructions should be followed in order to get the most out of your comal and to ensure that it is preserved over the years.
Seasoning:
Your comal is made with natural, untreated clay and thus it needs proper seasoning before its first use. First, you’ll put it over low heat and slowly bring it up to temperature. While it’s heating up, prepare a watery mixture of dry lime (also known as “cal”) and water. Use a dry towel or brush to spread a thin layer of it over the entire surface. Once the mixture has dried and hardened from the heat, let it cool. Once cool, rinse the comal gently and repeat the process. You can now use your comal!
Care:
Handle carefully when moving it or storing it, as it is fragile. Stick to wooden utensils if any, as metal can scratch and damage it.
Your comal is safe to use on a stovetop (both gas and electric), direct flames, and though it’s not that common, even in an oven. If you wish to use it on an induction cooktop, you’ll need an induction cookware interface disk. It is meant to slowly adjust to heat, so don’t submit it to drastic temperature changes and always let it cool before washing or storing.
It is NOT DISHWASHER SAFE. It is meant to be cleaned sparingly, and when doing so, wash it by hand using warm soapy water (ideally unscented). Soak briefly before washing if heavily soiled.
