Ayocote Negro Beans:
Ayocotes are runner beans (like the more well-known Scarlet Runners). Ayocote Negro beans are firm without being starchy and have a darker, inky bean broth than other runner beans enjoy. They are large, bold and one of the first beans we recommend if you're trying to sell a "steak and potatoes"-type on heirloom beans. Great with mole, in stews or as a hash with butternut squash.
Ayocote Morado Beans:
The big, beefy texture of the Ayocote Morado Beans is perfect for those trying to cut out meat and eat a more plant-based diet, or for vegetarians who are cooking dinner for their omnivore friends. No one will miss the meat when you toss them with good fruity olive oil, sauteed wild mushrooms, and a little too much garlic. Having said that, they'd be great as a side dish for a classic steak! These beans provide a deep, bouillon-flavored bean broth, making them ideal for soups!
Ayocote Blanco Beans:
A versatile Mexico-grown, mid-sized white bean that is rich and creamy yet holds its shape through long cooking. A dense, rich bean with a thicker skin. When fully cooked, it has a creamy and starchy consistency with a mild potato-like flavor. This rich and starchy profile calls for bacon and pancetta. You can make an elaborate dish like cassoulet or you can enjoy them in a simple soup or salad.
