This versatile giant, the Royal Corona Bean, is a true pantry staple with a surprisingly creamy interior. Straight from Europe into your pantry, these giant, fat, white runner beans are hand-harvested and even more luxurious than Greek and Spanish gigandes, and a little denser than traditional Italian coronas. You can easily substitute any white bean with these enormous beans, but be prepared to be amazed by their size when cooked. They have a slight starchiness, but if cooked until creamy, they can be a truly superior option for salads, wild mushroom dishes, and even pureed for fillings for ravioli and other stuffed pastas. For a delicious, meat-free option, these oddly grand beans can also be enjoyed in soups or a chili sauce. Savor their flavor with just a few shavings of Parmesan and a drizzle of your best olive oil.
