Despite its thick but soft-skinned appearance, this bean does not require any butter or cream to achieve its rich, indulgent flavor. Instead, a simple combination of garlic, olive oil, and water allows the bean to shine. Absolutely perfect beans - maybe better than Marcellas!

I love these caballero beans - so tender and creamy with an exceptionally giid flavor. I like to brine the beans overnight in a soution of 2 quarts filtered water with 1&1/2 tablespoons kosher salt; then cooked with half of a white or yellow onion, couple of bay leaves and garlic cloves for about 1-1&1/2 hours until beans are tender, adding a bit more salt when beans are almost done. A splash of extra-virgin olive oil and a sprinkle of sea salt flakes to serve.
