A California heirloom with deep roots and even deeper flavor, the Rancho Gordo King City Pink Bean is a pantry essential for any serious home cook. Named after King City in California's Salinas Valley where it was once widely grown, this small, smooth bean carries a rich, creamy texture and a mild, earthy flavor that makes it incredibly versatile. It shines in simple preparations; a pot of beans with aromatics, refried alongside rice, or layered into tacos and burritos. King City Pinks are closer to Buckeye; dense but not stodgy, they have a thin skin and produce a rich bean broth.
